    This comforting recipe is soft with a creamy texture using simple ingredients, ensuring it's easy for tiny hands to grasp and nibble on. Prepared with tender pudding rice, gently baked with milk, and a touch of natural sweetness from apple, baked rice pudding offers a delightful combination of flavours and textures.

    Ingredient information

    Pudding rice - You will need pudding rice to make this recipe. If you wanted to make with white rice, long grain rice, arborio rice you could, the texture may be a little different however.

    Milk - I have used whole milk, the main reason being that it is a little bit sweeter than semi skimmed milk/skimmed milk. The pudding needs the sweetness as there is no added sugar.

    Apple - Adding a tiny cube of apple is the perfect sweetness this recipe needs.

    Ground cinnamon - This spice is perfect for a rice pudding. You could additionally add other warm spices such as a pinch of nutmeg too.

    Serving suggestion

    This old-fashioned rice pudding is perfect served on its own, you could serve with more cooked apple or with some apple puree and greek yogurt.

    The great thing is these are individual portions so you can serve and customise as you like.

    Storage instructions

    Great news, this oven-baked rice pudding can be frozen. So if you did want to make a batch of the baked rice pudding, you absolutely can.

    The rice pudding can be frozen in an airtight container for up to 3 months or a freezer bag if you prefer. Be sure to label the airtight container/ freezer bag with the item and date.

    You can store the rice crumble in an airtight container in the fridge for up to 5 days.

    If you wanted to reheat the rice pudding from frozen, you will need to place the rice pudding in the fridge in an airtight container overnight to thaw.

    Pre heat your oven to 180C/350F, and heat for 20 minutes.

    Once defrosted you will not be able to re freeze.

    Equipment used to help with this recipe

    Silicone muffin cases - I love reusable kitchen stuff! These silicone muffin cases are dishwasher and freezer safe and can be used in the oven up to 230 degrees C! Ideal for individual baby portions.

    Muffin tin - A non-stick muffin pan that will easily clean any spills from the muffin cases. You will need one of these to easily hold the muffin cases.

    Airtight container - I much prefer the click-shut lids on these containers compared to others. They are also dishwasher and freezer safe and BPA free, so very suitable for food use.

    Ingredients

    Makes 6 portions

    • 70g pudding rice, 2 teaspoons per muffin case

    • 1/4 apple, peeled and cut into 6 cubes

    • 320ml whole milk

    • 1/4 teaspoon cinnamon

    Instructions

    • Start by preheating your oven to 160C, and prepare your muffin tin and silicone cases (using silicone cases means you do not have to grease the tin or cases)

    • Take 2 teaspoons of the uncooked rice and add to each of the cases.

    • Place one piece of the apple into each muffin case.

    • Finish with a sprinkle of cinnamon.

    • Pour the milk equally between the muffin cases. Stir the rice mixture in each muffin cup and pop in your preheated oven. The cooking time is for 30 minutes.

    • Take out of the oven and stir and place back in the oven for a further 20-25 baking time.

    Recipe notes

    You can easily make this homemade rice pudding recipe dairy free by using almond milk to make an almond milk rice pudding.

    You can also use other plant based milk such as oat milk or soy milk, which will equally make a comforting dessert for the first time.

    Feel free to customise the fruit used, you could swap out the apple for strawberries, raspberries or even plum is yummy.
