Ingredient information
Oats - I have used rolled oats but you can use jumbo oats or any oats you have, they will be blitzed in a food processor to make oat flour so you can use what you have. You can also blitz rice krispies if you like, or use almond flour or coconut flour.
Banana - It is best to use an overripe banana for this recipe as they have so much more flavour, and easier to mash.
Oat bran - I have used oat bran for added nutrition, you could just use the blizted oats if you prefer.
Creamy peanut butter - You can use other nut butters such as almond butter, sunflower seed butter, cashew butter or hazelnut butter. Do not use a crunchy peanut butter as this can be a choking hazard.
Apple puree - I have used an apple puree pouch, but you could use cooked apples and then pureed.
Serving suggestion
The easy peanut butter balls recipe would be great served with fresh berries such as blueberries and strawberries and a little plain Greek yogurt to make a great snack.

Storage instructions
The easy energy bites can be stored in the fridge for up to 3 days, stored in an airtight container.
If you wanted to freeze the balls you will need to make sure that the balls have cooled down at room temperature.
Once cool, If you are freezing individual portions, you can store the in an airtight container or air lock bag.
Make sure that the bag/airtight container is labelled with the item and the date. I use masking tape to label the airtight container.
To defrost the balls, leave in the fridge overnight and make sure they are fully defrosted.
Once the balls have been defrosted you will not be able to refreeze.
Equipment used to help with this recipe
Large mixing bowl - Definitely choose a stainless steel one - they are lighter than the stone or glass ones and very easy to clean.
Airtight container - I much prefer the click-shut lids on these containers compared to others. They are also dishwasher and freezer safe and BPA free, so very suitable for food use.
Nutri bullet - I have found a blender to be an invaluable tool in the preparation of many of my baby led weaning recipes.
Large baking sheet - I have chosen to use a non-stick and BPA free baking sheet - they are easy to clean and, if you buy more than one, easily stackable and easily stored.

Instructions
- Blitz the rolled oats if you have not done so, and pour into a medium bowl.
- Add in the remaining ingredients and mix together using a spoon.
- Bring the ingredients together using your hands, scraping all the bits from the side of the bowl to form a peanut butter dough. You could use a handheld mixer if you prefer.
- Split the peanut butter mixture into 6 pieces for medium sized balls. You could use a small ice cream scoop.
- Roll the dough into balls and roll in a little bit of desiccated coconut if you like. Place in an air-tight container with parchment paper.
- They are ready to eat, no need to bake.
Notes
You could use other nut butters for this simple recipe such as almond butter, cashew butter or hazelnut butter.
