Ingredient information
Carrots - I have used carrots as they work perfectly in a healthy soup recipe. In this recipe they are the star of the show. With minimal ingredients they are so sweet and delicious in this recipe.
Onion granules - I have used onion granules for this recipe for speed. This is great to have in your store cupboard when you need flavour but time is not on your side.
Garlic granules - I have used garlic granules for this recipe for speed purposes too. You could use 1 clove of fresh garlic too if you like.
Coriander - I have used ground coriander for this recipe. Carrot and coriander pair so nicely together, the perfect combination for a soup recipe. You could alternatively use a little curry powder instead if you like.
Stock cube - I have used a zero salt vegetable stock cube for this recipe as it is for baby led weaning. A low salt variety is ok to use too. You can of course use a chicken stock too if you like.
Serving suggestion
The carrot soup recipe would be great served with toasted buttered fingers or simply just serve with some bread.
You can also serve the creamy soup with a dollop of plain Greek yogurt in the middle of the bowl if you like.

Storage instructions
This is a great make ahead carrot and coriander soup that is perfect for lunch or dinner.
You can store in the fridge for up to 3 days in a freezer-safe container, or if you wanted to freeze in the freezer, you can either freeze in the large airtight containers, store in small airtight containers or alternatively you can store in large silicone ice cube trays, this way you can pop them out as and when you need across 3 months.
Just make sure the soup has cooled to room temperature before transferring to your chosen storage container.
The best way to defrost the soup, is to thaw in the fridge overnight, and then reheat on the hob in a saucepan for 10 minutes or so until piping hot, and then leave to cool.
Equipment used to help with this recipe
Saucepan - So many pan sets out there but I particularly like to use pans with a non-stick surface for ease of cleaning and ones that are suitable for different types of hob surface.
Airtight container - I much prefer the click-shut lids on these containers compared to others. They are also dishwasher and freezer safe and BPA free, so very suitable for food use.
Nutri bullet - I have found a blender to be an invaluable tool in the preparation of many of my baby led weaning recipes.

Instructions
- Pop all the ingredients into a large saucepan along with 400ml of hot water.
- Cook everything on a medium heat for 25-30 minutes until the carrots are nice and soft.
- Blitz the soup in a food processor or a Nutri bullet, if you are doing this when the soup is piping hot, be careful.
- Leave the soup to cool before serving to your baby. You can portion into small airtight containers or large ice cube trays for future use from the freezer.
Notes
You can add other veggies or grains to the soup if you like such as parsnips, sweet potato, red lentils or celeriac by using the carrots as the base.
This recipe is great if you have any leftover veggies to use up too. A great recipe for older kids too not just for baby.
