I love to create recipes that are simple but do not ever compromise on flavour and taste! I like to use ingredients that hopefully you will all have in your store cupboard, so that you can whip up these recipes with ease!
I know time is of the essence most days, so this recipe is so quick to make which is what we like!
This makes one substantial bento box, but if you wanted to make this recipe as part of a main meal for your family, I would quadruple the recipe and you may even have some leftover for lunch the next day too! Bonus!
I have mentioned below, but if you haven’t tried the simple yet effective combination of lemon and cheese you must! It’s so fresh and fragrant, perfect for these summer months, and also this would be a perfect salad addition to a bbq for example!
Cucumber is a great finger food and a delicious healthy snack for your little ones! I have made the cucumber into quarters but you could make them into sticks or use a cutter to make them even more appealing for your little ones!
I know that speaking to many of you, plums get left behind in your fridge! Don’t worry too much if you don’t know what to do with plums if you have any left over, there are a multitude of recipes you can include them into for example, a crumble, an oat bar, a tart the possibilities are endless! I have just simply quartered them in this recipe.

Ingredient information
Giant cous cous - If you haven’t tried giant cous cous you just have to! It’s so delicious and I actually prefer it to the usual cous cous.
Lemon - The lemon juice makes this recipe! Makes the cous cous so fresh and delicious.
Parsley - If you do not have fresh parsley, you could absolutely use dried parsley.
Cheddar cheese - I have used a mature cheddar, but you could use any pasteurised cheese if your choice. Stay clear of the mouldy cheeses from 6 months and unpasteurised cheeses. If you’re unsure, check the packet!
Cucumber - My son is on a cucumber hit at the moment, so I’ve added it into this box! A great snack and finger food if made into sticks!
Plum - I love the fact plums are inexpensive and can be used for so many recipes!
Serving suggestion
The bento box os perfect eaten on its own! If you did want to serve with anything I would serve with a little extra fruit or even some homemade garlic bread! Greek yogurt is always a tasty dessert!
Storage instructions
This bento box can be made ahead of time which is great news! The bento boxes I use are airtight too so there’s no messing around with switching between containers! This can be made in the same container that you eat from!
The bento box can be left for up to 3 days in the fridge and unfortunately cannot be frozen.
Recipe | Giant Cous Cous Bento Box
Ingredients
Makes 1 bento box
55g Giant cous cous
50g Mature cheddar cheese
1/2 Lemon, juiced
Small handful fresh parsley, chopped
5 slices cucumber, halved
1/2 plum, quartered
Instructions
Start by cooking the cous cous in hot water for 20 minutes until soft.
Once cooked I strain the cous cous with cold water to cool slightly.
Next, add the cous cous to a mixing bowl and add in the cheese, lemon juice and parsley. Mix together until combined.
Add the cous cous to the bento box.
Add the cucumber and plum to the other compartments of the bento box.

If you wanted to use the usual cous cous you could, or this recipe works so well with pasta too! Lemon and cheese works so well together!
