    An Easy Egg Recipe

    The perfect recipe for an egg lover! I don’t know about you but I always forget about egg salads for a quick nutritious lunch!

    This egg salad is so tasty, and a good idea if you haven’t tried eggs with yogurt before it is so delicious!

    It makes a nice change from mayonnaise, you can use mayonnaise if you prefer, but just be mindful if you are making your own that your 6 month old won’t be able to have the mayonnaise, unless the eggs have the red lion stamp on them. This goes for all eggs at this age if you decide you want to serve them runny eggs.

    I love the fact that the green beans are barely noticeable in this salad which is perfect if you are trying to disguise veggies. You can of course leave these out all together.

    The piece of toast is great, it can be dipped or spread or simple eaten on its own, I think this makes what could have been a simple egg sandwich a fun lunch that can be dipped and torn.

    The fruit complements the end of the lunch, you could use fruit that you already have in the fridge, or simply choose your child’s favourites!

    Ingredient information

    Large egg - As you know if you read my posts, I always use free range eggs as they are the best to use! Hard-boiled eggs are a great first food for baby-led weaning, they are great for little hands.

    Natural Greek style yogurt - The full fat yogurt is the best to die for your little ones and not forgetting yourselves! The fat free versions will most likely have added sweeteners.

    Green beans - Green beans are underestimated in my opinion! They are a great veggie to have in the fridge or even in the freezer! They’re great and perfect for baby led weaning!

    You could use white beans too if you prefer.

    Slice of bread - I like to use wholemeal/whole grain bread for my son, you can use your bread of choice though. The perfect finger food for babies.

    Banana - Packed full of potassium, they are again the perfect food for a baby led weaning and toddler snack! Break up into smaller pieces if you prefer.

    Blueberry - I have combined my son’s favourites, he loved blueberries and banana so I had to mix both in this recipe.

    If you wanted to include a lunch box friendly veggie, mini cucumbers would be great.

    Serving suggestion

    The bento box is great served on its own as usual. However if you did want to serve with anything you could add some more plain Greek yogurt to a small airtight container with swirled strawberry purée or even serve with cucumber and red pepper sticks.

    Other great bento box recipes: Peanut butter banana rolls, snack bento box, Pesto pasta or Egg rolls.

    Storage instructions

    Once made this can be kept in the fridge for up to 3 days in the fridge.

    This is a great make ahead lunch or small dinner. A great on the go lunch that can be enjoyed by all.

    The quality of the egg salad when frozen and then defrosted is not great, so it is best to make ahead and eaten within the timescale mentioned above.

    Equipment Used To Help With This Recipe

    Small bowl - I like to use a stainless steel mixing bowl - they are usually lightweight and easy to clean.

    Airtight container - I much prefer the click-shut lids on these containers compared to others. They are also dishwasher and freezer safe and BPA free, so very suitable for food use.

    Ingredients

    Makes 1 bento box for little tummies

    • 1 free range egg, boiled and mashed

    • 2 tablespoons natural style Greek yogurt

    • 6 green beans, thinly sliced

    • 1 slice whole meal bread, toasted and sliced into fingers and halved again

    • 1/4 banana, sliced

    • 4 blueberries, squished from 6 months

    Instructions

    • Start by boiling your egg in hot water for 10 minutes. You want a hard boiled egg, so 10 minutes in boiling water is enough.

    • Once the egg is cooked, drain, and leave to cool for a few minutes.

    • Crack and peel the egg and pop into a small bowl.

    • Add in the yogurt and break up the egg using the spoon and stir.

    • Add in the green beans and stir. You could add a little black pepper too if you wanted to at this point.

    • Place the egg into the bento box, along with the toasted bread.

    • Add the fruit to the bento box too and enjoy.

    If you wanted to use mayonnaise you can, I have chosen to use yogurt as I know my son loves it!

    If you buy mayonnaise from the supermarket it is ok from 6 months of age as it has most likely been pasteurised.
