Ingredient information
Turkey leftovers - You could use chicken or veggies of choice instead of turkey.
Onion - A red or a white onion would work well in this recipe.
Garlic - You can use a large fresh garlic clove, instead of the garlic granules.
Ginger - You can use a thumb nail sized piece of fresh grated ginger instead of ground ginger.
Cumin - The perfect earthiness spice that is needed for the curry recipe.
Paprika - The added paprika is in keeping with a tikka recipe that adds flavour and colour.
Garam masala - A touch of garam masala adds lots of flavour to the curry.
Tomatoes - You can use chopped tinned tomatoes instead if you prefer.
Yogurt - Plain Greek yogurt is the best to use for this recipe.
Black pepper - I have used black pepper and spices to season without using salt.
Serving suggestion
You could serve the leftover turkey curry with fluffy white basmatti rice, white rice, brown rice, cauliflower rice, sliced green pepper or quinoa. Or you could serve with homemade naan bread or cauliflower traybake.
Storage instructions
The leftover turkey curry can be stored in the fridge for up to 3 days, stored in an airtight container.
If you wanted to freeze the turkey curry, you will need to make sure that the curry has cooled down before transferring to either a freezer bag (carefully) or airtight container. Ensure that the bag/airtight container is labelled with the item and the date. I use masking tape to label the airtight container.
To defrost the curry, leave in the fridge overnight and make sure that it is fully defrosted, before re heating.
To reheat, place the defrosted curry in a saucepan and reheat on a medium heat for 15-20 minutes. You can add in a splash of water if the curry is very thick.
Once the curry has been defrosted you will not be able to reheat or re freeze.
Equipment used to help with this recipe
Saucepan - So many pan sets out there but I particularly like to use pans with a non-stick surface for ease of cleaning and ones that are suitable for different types of hob surface.
Airtight container - I much prefer the click-shut lids on these containers compared to others. They are also dishwasher and freezer safe and BPA free, so very suitable for food use.
Masking tape - After much experimenting with different types of labels, I found that masking tape works the best and is less expensive than some of the labels and stays stuck down even when frozen.
Recipe | Leftover Turkey Curry
Ingredients
Makes 4-5 portions
300g cooked turkey, cut into strips
2 tablespoons vegetable oil
1 onion, diced
1.5 teaspoons garlic granules
1 teaspoon ground ginger (or grated fresh ginger)
2 teaspoons paprika
1 teaspoon cumin
1/2 teaspoon garam masala
1 400g tin plum tomatoes (or chopped tomatoes)
125g plain Greek yogurt
A grind black pepper
Instructions
Start by adding the vegetable oil to a large pan on a high heat and add in the diced onion, cover with a lid, turn down the heat and cook for 10 minutes, stirring occasionally.
Next, turn down the heat and add in the garlic, ginger, cumin, paprika, garam masala and stir.
Pop in the cooked turkey, and stir. Add in the plum tomatoes and use scissors to cut up the tomatoes.
Add in a few grinds of black pepper, cover and simmer on a medium heat for 10 minutes.
Add in the yogurt, stir and cook for a further 5 minutes.

Recipe notes
To make the leftover turkey curry dairy free, you can use a dairy free greek yogurt, coconut cream for added flavour. You could also use a vegan meat alternative to make the recipe vegan.
For added flavour, add in a tablespoon of tomato puree (tomato paste).
If you did not have the spices you could add in 2 tablespoons of curry powder from your store cupboard.
You could add all the ingredients into the slow cooker and add the Greek yogurt just before serving.
You could make and flavour different naan breads for added flavour.
