Double cream (heavy cream) -You can give double cream to your baby in moderation. within food it is ok. That is why this recipe is great for an indulgent meal.
Milk - You can use a whole milk or a semi skimmed milk for this recipe. It is recommended that baby’s from 6-2 years old have whole milk and from 2 years semi skimmed milk.
Egg - I always use free range eggs with the red lion stamp as these eggs are great to use within baby led weaning and family meals too.

If you wanted to freeze the French Toast, you will need to make sure that the French Toast has cooled down at room temperature before transferring to either a freezer bag or airtight container.
You can freeze into individual portions if you prefer. Ensure that the bag/airtight container is labelled with the item and the date. I use masking tape to label the airtight container.
To defrost the French Toast, leave in the fridge overnight and make sure that it is fully defrosted, before re heating.
To reheat, place the defrosted French Toast in an oven proof dish and reheat on a medium heat for 10-15 minutes.

Oven casserole dish - I love to use a ceramic dish for my oven baked recipes - they are durable and can withstand high oven temperatures. A baking dish and serving dish in one!
Pyrex Jug - A measuring jug is a must-have kitchen utensil and I like the glass Pyrex jugs hygiene and ease of cleaning. The measuring markers are easily readable too.
Baking sheet - I have chosen to use a non-stick and BPA free baking sheet - they are easy to clean and, if you buy more than one, easily stackable and easily stored.
Recipe | Baked French Toast With Bluberries
Ingredients
Makes 4 small portions
3 slices sliced bread, cut into 4 triangles or into bread cubes
Unsalted butter or cooking spray
150ml double cream (heavy cream)
150ml whole or semi skimmed milk
1 large egg
1/4 teaspoon cinnamon
60ml strawberry/apple puree
Handful juicy blueberries
Rolled oats, for garnish
Instructions
Start by pre heating your oven to 180C or 350F.
Place oven casserole dish on the baking sheet. Grease the dish with unsalted butter or cooking spray.
Layer the sliced bread triangles into the baking dish and set aside.
Pour the double cream into a jug, followed by the milk, apple/strawberry pure, egg and the cinnamon. Whisk together using a fork.
Pour the creamy custard mixture over the sliced bread evenly.
Push down the blueberries into the creamy milk mixture.
Sprinkle with the oats and pop in the oven for 20-25 minutes, until golden brown.

Recipe notes
You can easily make the Baked French Toast gluten free and vegan/dairy free. All you will need to do to make gluten free is use a gluten free bread, and to make vegan you will need to use a vegan cream, oat milk and an egg replacer to replace the egg in the recipe. Weigh the cracked egg to replace with he egg replacer.
Other types of bread you can use: Challah bread, sourdough bread, regular white bread or brioche bread.
