    Ingredient information

    Baked potato - I use baking potatoes as these are the best for baking in the oven, the size of a baked potato are great for a meal too!

    Cheddar cheese - This is a great staple to have in the fridge, you could use a touch of grated mozzarella too if you wanted the recipe to be even more cheesy.

    Cream cheese (the secret ingredient!) - Its good to use full fat cream cheese from 6 months to at least 2 years old.

    Chives - I have used dried chives, but if you have fresh herbs you could use them too!

    Serving suggestion

    This jacket potato recipe is a great recipe that can be served on its own as a stand alone meal. If you did want to serve the jacket potatoes with anything you could serve alongside some peas, sweetcorn, carrot batons or even a side of cucumber.

    Dessert options could be: mango pots, blackberry cheesecake, strawberry dessert, banana and blueberry cake (all BLW friendly)

    Storage instructions

    The jacket potato can be stored in the fridge in an airtight container for up to 3 days. You can freeze the jacket potatoes in an airtight container or in freezer bags for up to 3 months.

    When you would like to defrost the potato, defrost in the fridge overnight and you can reheat in the oven for 15 minutes at 180C or 350F.

    Just check that the potato is piping hot and leave to cool before serving to your baby. Do not refreeze.

    Equipment used to help with this recipe

    Mixing bowl - I like to use a stainless steel mixing bowl - they are usually lightweight and easy to clean.

    Baking tray - I have chosen to use a non-stick and BPA free baking sheet - they are easy to clean and, if you buy more than one, easily stackable and easily stored.

    Ingredients

    Makes 1-2 portions

    • 1 medium baking potato

    • 50g cheddar cheese, grated (save some for sprinkling on top if you wish)

    • 1 tablespoon full fat cream cheese

    • 1/2 teaspoon dried chives (extra for garnish if you wish)

    • A grind of black pepper (optional)

    Instructions

    • Preheat oven to 180C or 350F.

    • Make sure that you wash your potato, and prick potatoes (if baking more than one) in a few places.

    • Pop the potato on a baking sheet, and place on an oven rack for 1 hour and 30 minutes.

    • Once the potato is golden brown and cooked, make sure the potato flesh is soft and fluffy. Leave to cool for 5 minutes or so. Get a sharp knife and cut the potato in half.

    • Scoop out the potato and place in a large bowl, set aside the potato skins.

    • Add in the cheese, cream cheese, chives and black pepper if using and mix together until combined.

    • Spoon the potato mixture back into the potato skins, approx 2 tablespoons in each potato skin.

    • Garnish with more grated cheese and chives if you wish.

    You can easily make this recipe dairy free/vegan, by choosing a vegan cream cheese and vegan cheddar cheese for the jacket potato.

    You could add in diced spring onions (green onions) if you wish!
