    Vegan Coronation Chicken Recipe

    The King’s Coronation was not long ago now and this has inspired me to make this bento box.

    I love Coronation chicken and really wanted to create a vegan child friendly yummy lunch!

    My son does love curries so I thought this would be perfect for him, and for me! Great for picky eaters.

    This would be suitable for babies from 6 months old without the sultanas. The whole bento box with the sultanas is suitable from 1 year onwards.

    The tortilla bunnies are perfect for dipping or eaten on their own. I love the fact tortilla chips can be made so easily and are far better for you if they are homemade.

    I love the fact that this on the go lunch can be for all the family. You could double/triple the ingredients to make this lunch for the whole family.

    What Is Coronation Chicken Made Of?

    Vegan coronation chicken typically consists of simple ingredients such as a plant-based protein such as vegan chicken or chickpeas as the base ingredient. A great way to add a plant based protein to a meal.

    These are mixed with a blend of dairy-free yogurt, a selection of aromatic spices like curry powder, ground cumin, and paprika.

    To add depth of flavour and texture, ingredients like sultanas, flaked almonds, and fresh herbs such as coriander are often included.

    The final touch is a squeeze of lemon juice for that iconic tangy finish.

    This vegan twist on the classic dish ensures a delightful combination of creamy, spicy, and fruity notes, perfect for a sandwich filling or topping for a coronation chicken salad, a topping for a baked potato or naan bread.

    Is Vegan Chicken Ok For Baby?

    Vegan chicken can be a suitable option for babies, provided that it is prepared using age-appropriate ingredients and cooking methods.

    The nutritional content of the vegan chicken should be carefully assessed to ensure it meets the baby's dietary requirements for growth and development.

    It is crucial to introduce new foods to babies gradually and monitor for any signs of allergies or intolerances.

    Consulting with a health visitor or a registered dietitian before including vegan chicken in a baby's diet is advisable to ensure that the meal plan is balanced and nutritionally adequate.

    Ingredient information

    Vegan chicken/Cooked chicken breast - If your baby is not following a vegan diet, you could leftover cooked chicken. You could use the thigh or the leg shredded, or chicken breasts, just check for bones!

    Fresh mango - Mango can be hard for young kids to like, in this recipe they will really enjoy it! Adds the right amount of sweetness.

    Curry powder - I have used mild curry powder which is all this recipe needs.

    Cinnamon - Complements the curry powder flavours, and adds some earthiness sweetness to the recipe.

    Greek yogurt - So versatile and works so well within the recipe. You could use a vegan mayonnaise too if you prefer.

    Juicy sultanas - As mentioned you can use raisins instead.

    Wholemeal tortilla - I like to use whole meal but you could use seeded or white if preferred.

    Strawberries and blueberries - Finishing off with some nutritious berries packed full with antioxidants and vitamin C.

    Serving suggestion

    This bento box can easily be served on its own as part of a lunch or early dinner on the go for your baby and family.

    You could serve along side another piece of fruit like a banana or pear. Or a vegetable such as red pepper or cucumber.

    Storage instructions

    This bento box can be stored in the fridge for up to two days, which is great if you need the make this in advance, for the next day.

    You could make two in advance and you have two lunches ready for the week.

    If you wanted to freeze the coronation chicken, you can if it is stored in an airtight container in the freezer.

    To defrost the coronation chicken, leave to thaw in the fridge overnight until fully defrosted.

    Once defrosted you will not be able to refreeze.

    Recipe | An Easy Healthy Vegan Coronation Chicken For Baby

    Makes 1 bento box for little tummies

    • 40g, 1/2 vegan chicken strips, shredded

    • 40g fresh mango, diced small

    • 1 teaspoon mild curry powder

    • 1/2 teaspoon cinnamon

    • 2 tablespoons Vegan Greek yogurt

    • 20g sultanas (leave out from 6 months old)

    • 1/2 wholemeal tortilla, I used a bunny cutter

    • 1/2 teaspoon olive oil

    • 2 strawberries, quartered

    • 10 blueberries, squish between fingers for babies from 6 months

    Instructions

    1. Start by pre heating your oven to a medium heat of 180C or 350F.

    2. Mix the cut out bunny tortillas in a bowl with the olive oil.

    3. Once coated on each side, pop on a lined baking sheet in the oven for 15-20 minutes, until they are just beginning to brown. Take out the oven and leave to cool.

    4. Next, pop the vegan shredded chicken, mango, spices, sultanas and yogurt into a mixing bowl and mix until combined. You could add a little black pepper too if you like.

    5. Place the Coronation chicken in the bento box in the largest compartment.

    6. Next, pop the bunny tortilla chips in one of the small compartments.

    7. Then the strawberries and blueberries in the last compartment.

    Recipe notes

    If you didn’t have a plant based yogurt you could use a plant based creme fraiche, which would work just as well.

    Same with the sultanas, you could use dried raisins or dried apricots.
