Ingredient information
Carrot - The perfect combination and colour match to sweet potato! Delicious tasting too!
Sweet potato - The main ingredient and this is where the sweetness comes from alongside the carrot.
Olive oil - You could use avocado oil if you wish or even some vegetable oil.
Onion - You do not have to be precise when chopping the onion as it will get blitzed!
Ground coriander - I thought a fragrant spice would help balance out the sweetness of the potato and carrot.
Lemongrass - This brings a thai style flavour to the soup i feel!
Stock cube - I use zero salt or low salt stock cubes within my recipes for my baby.
Creme fraiche - I have used a vegan creme fraiche but you can use, cream, yogurt or vegan yogurt.
Serving suggestion
I have mentioned below a few serving suggestions if you wanted to add in a little protein to the soup! You really can make this soup your own! Adding fried aubergine cubes to the soup or even a little cheddar cheese or vegan cheese to keep the recipe dairy free!
Storage instructions
As mentioned above this is a great recipe if you would like to make a batch and store in ice cube trays and pull from the freezer when you need. The soup can be stored for up to 3 months in the freezer and I recommend using silicone ice cube trays as this will make it easier removing individual portions.
You can alternatively store in the fridge in an airtight container for up to 4 days, perfect for lunches in the week for your little ones!
Equipment used to help with this recipe
Nutri bullet - I have found a blender to be an invaluable tool in the preparation of many of my baby led weaning recipes.
Ice cube tray - I found that these large ice cube silicone moulds were ideal for freezing individual baby portions.
Saucepan - So many pan sets out there but I particularly like to use pans with a non-stick surface for ease of cleaning and ones that are suitable for different types of hob surface.
Airtight container - I much prefer the click-shut lids on these containers compared to others. They are also dishwasher and freezer safe and BPA free, so very suitable for food use.
Recipe | Sweet Potato Soup
Ingredients
Makes 4 portions
1 large carrot (190g), peel and sliced
1 sweet potato (245g), peeled and sliced
2 tablespoons olive oil
1 medium onion, diced
1/2 teaspoon ground coriander
1 stick lemongrass
1 vegetable zero salt stock cube
Black pepper
Creme Fraiche or dairy free creme fraiche (optional)
Instructions
Start by getting a large saucepan and fry the onion in the olive oil until the onion is soft and golden.
Add the carrot and sweet potato to the onions in the pan.
Add the coriander, lemongrass, a grind of black pepper and the stock cube and add in 500ml hot water.
Stir the soup mixture, cover and cook on a low-medium heat for 20-25 minutes.
Serve with a drizzle of creme fraiche or dairy free creme fraiche (optional).

Recipe notes
This recipe is deliciously vegan and dairy free, you could add some pulled chicken to the soup for added protein or you could even add a small piece of cod to the recipe, you could blitz this altogether - it’s completely up to you!
