It is best to use with ripe bananas, and great to use up bananas with brown spots.
Self raising flour - A little flour is needed as a binder and raising agent.
If your little one has a sensitive tum, you could use ground oat flour and 1 teaspoon of baking powder.
Greek yogurt - This is a great allrounder and I love to use it within so many recipes.
Makes for a creamy texture and delicious dessert.
Serving suggestion
The puddings would be great served with Greek yogurt, and a little extra mashed banana and cinnamon if you wish.
Or you could serve with a little double cream (heavy cream).
The easy pudding recipe can be enjoyed the next day at room temperature too.

Storage instructions
Store the puddings in an airtight container in the fridge for up to 3 days.
Or you can use a container with cling film (plastic wrap).
The puddings can be frozen in an airtight container or in a freezer bag for up to 3 months.
Be sure to label the freezer bags with the item and date, so it is clear how long they can be stored.
To label the airtight container I use masking tape this way it will not ruin the airtight container.
To defrost the puddings, keep them in an airtight container and defrost in the fridge overnight.
Make sure they are fully defrosted before serving.
Equipment used to help with this recipe
Large bowl - Definitely choose a stainless steel one - they are lighter than the stone or glass ones and very easy to clean.
Muffin tray - A non-stick muffin pan that will easily clean any spills from the muffin cases.
You will need one of these to easily hold the muffin cases.
Silicone cups - I love reusable kitchen stuff! These silicone muffin cases are dishwasher and freezer safe and can be used in the oven up to 230 degrees C!
Ideal for individual baby portions.

Ingredients
Makes 6 Puddings
138g banana (1 medium banana)
138g plain natural Greek yogurt
138g Self raising flour
Instructions
Start by preheating your oven to a medium heat of 180C or 350F. Prepare a muffin tin with silicone or paper muffin cups.
Place the banana into a large mixing bowl and mash.
Sift in the self raising flour and add in the Greek yogurt and mix until combined. (You could use a food processor or hand mixer to mix all the ingredients together if you prefer)
Transfer approx a tablespoon of the banana mixture to each muffin cup and smooth over using a back of a spoon.
Pop the muffin tray in the oven and bake banana pudding for 20-25 minutes until golden brown.
For best results, enjoy the homemade pudding warm or enjoy at room temperature for babies.

Recipe notes
If you wanted to make the recipe gluten free, you could use a gluten free self raising flour.
The muffins may not rise as much and the texture may be a little different (less fluffy) but it is a good alternative for gluten free babies.
You could easily make this delicious recipe dairy free by choosing a coconut milk based Greek yogurt.
You could try adding 1-2 sliced bananas at the bottom of the silicone cup as an extra element to the perfect dessert. Bake the pudding as advised above.
