    Ingredient information

    Carrots - Perfect for baby led weaning, using the finest grater works best for this recipe.

    Flaxseed - Great to use with water as an egg substitute. See below how to do this.

    Gram flour (chickpea flour) - You can use plain flour too, But this recipe is great with chickpea flour. Great if your little one is gluten free.

    Olive oil - A drizzle in the pan to fry the fritters, you could use unsalted butter too.

    Black pepper - You can leave this out, I use a little to season the carrot fritters.

    Serving suggestion

    You could serve the carrot fritters, alongside a Orzotto recipe or you could serve with a Dal recipe. Alternatively you can serve the carrot fritters on their own as part of a lunch recipe or as a snack recipe on the go.

    Storage instructions

    The carrot fritters once cooled, can be stored in the fridge in an airtight container for up to 3 days. If you wanted to reheat the carrot fritters, you will only be able to reheat once from the fridge. I would suggest heating them up in the oven, at 180 degrees, for 15 minutes. Leave to cool before serving to your baby.

    To store in the freezer, leave the fritters to cool and store in an airtight container or in airtight freezer bags. They can be kept in the freezer for up to 3 months.

    Equipment used to help with this recipe

    Frying pan - I love the non-stick surface of this particular frying pan and it’s suitable for all types of hob.

    Large mixing bowl - Definitely choose a stainless steel one - they are lighter than the stone or glass ones and very easy to clean.

    Airtight container - I much prefer the click-shut lids on these containers compared to others. They are also dishwasher and freezer safe and BPA free, so very suitable for food use. 

    Recipe | 5 Ingredient: Egg Free, Healthy Carrot Fritters

    Ingredients

    Makes 10 small fritters

    • 2 medium carrots (220g) finely grated

    • 3 tablespoons flaxseed, 3 tablespoon water, mix together

    • 2 tablespoons chickpea flour (gram flour) or plain flour

    • A grind of black pepper

    • 2 tablespoons olive oil

    Instructions

    • Firstly mix together the flaxseed and the water in a small bowl and set aside for 5 minutes.

    • Pop the grated carrot, flour, black pepper and flaxseed mix into a large mixing bowl.

    • Mix all the ingredients together until combined.

    • Heat the olive oil in a frying pan, and spoon 1 tablespoon of the carrot mixture into the frying pan followed by 2 more, you do not want to over crowd the pan so cook the fritters in batches.

    • Push down the fritter with the back of a spatula and cook for 2 minutes, flip over and cook for a further 2 minutes.

    • Leave to cool slightly and serve.

    Recipe notes

    As mentioned you can use plain flour, or you could use ground oats too. You could also add in some of your favourite herbs and spices if you wish.
