Ingredient information
Rolled oats - I have decided to go with rolled oats as they are always in my cupboard, they are cheap to buy and a great nutritious snack choice for my toddler. You could use old fashioned oats or jumbo oats.
Greek yogurt - I always serve Greek yogurt to my toddler, this is the lowest sugar choice if you’re looking to reduce sugar in your baby’s diet, compared to other ‘baby friendly’ yogurts out there.
Serving suggestion
You could serve the cookies with a variety of different options, you could serve as part of a meal or even a quick breakfast on the go.
You could serve with my peach melba recipe or my chia seed pudding recipe or strawberry dessert.
Storage instructions
It is very simple to store the cookies, all you will need to do is, once cooled, store in an airtight container, and store in the fridge for up to 5 days.
Or you can store in the same way, once cooled in an airtight container in the freezer for up to 3 months. Great for batch cooking! You can alternatively use freezer airlock bags too!
Equipment used to help with this recipe
Baking Sheet - I have chosen to use a non-stick and BPA free baking sheet - they are easy to clean and, if you buy more than one, easily stackable and easily stored.
Airtight container - I much prefer the click-shut lids on these containers compared to others. They are also dishwasher and freezer safe and BPA free, so very suitable for food use.
Recipe | 20-minute Healthy Yogurt Oat Cookies
Ingredients
Makes 20 cookies (medium sized) quantity may vary depending on the cutter you use.
150g rolled oats, blitzed to oat flour
100g Full fat Greek yogurt
Instructions
Start by pre heating the oven to 180C or 350 F, and line a baking tray with parchment paper.
Once you have blitzed the oats using a food processor or Nutri Bullet, place them in a large bowl and add in the yogurt.
Mix using a large spoon or wooden spoon and bring together the oat mixture with your hands making a ball.
Roll the yogurt mixture until approx 0.5cm thick. Use your chosen cutter to cut out the dough. Roll and repeat until you have used all the dough.
Place cookies onto the lined baking tray or baking dish you could use a little cooking spray if you like. Pop in the preheated oven for 10-12 minutes, until golden brown. Leave to cool on a wire rack before serving.

Recipe notes
To make the cookies dairy free/vegan all you will need to do is use a plant-based yogurt, or check out my teething biscuit recipe.
You could add a tablespoon of almond butter, peanut butter, cashew butter or chia seeds for added nutrition, for a delicious oat bar for the whole family.
