Ingredient information
Banana - packed with potassium, a great snack or dessert! Perfect for weaning!
Peanut butter - 100% nut butters are always best to use for your baby, as no added oil, salt or sugar.
Desiccated coconut - This is great to sprinkle of porridge, or like this rolled with a nut butter.
Freeze dried strawberries - I use these a lot, and find buying a large bag works out cheaper and lasts for longer.
Serving suggestion
These are a great little snack, and are perfect served on their own or you could even freeze them to make a delicious frozen treat!
However if you did want to serve them with anything you could serve with some Greek yogurt or a fruit puree or even with some extra fruit such as strawberries or blueberries. A mango pot for dipping or even a chia seed pudding for breakfast.
Storage instructions
All you need to store the banana sushi is an airtight container. You can see where I get my airtight container below. They will keep in an airtight container for up to 3 days. They are best eaten on the day.
You could also freeze the banana sushi in the freezer in freezer bags or and airtight container for up to 3 months. They are a great frozen treat too. Or you can leave to defrost in the fridge, it’s up to you!
Equipment used to help with this recipe
Airtight container - I much prefer the click-shut lids on these containers compared to others. They are also dishwasher and freezer safe and BPA free, so very suitable for food use.
Freeze dried strawberries - These can be difficult to find in the local supermarket. Try and choose a brand that sells them as no added sugar - this will be a better option for your little ones.
Recipe | Banana Sushi
Ingredients
Makes 8 slices
1 large peeled banana
4 tablespoons peanut butter
2 tablespoons desiccated coconut
2 tablespoons freeze dried strawberries
Instructions
Start by cutting your banana in half.
Prepare the coconut and freeze dried strawberries on 2 separate plates.
Spread the peanut butter on the outside of the banana, coating all sides.
Roll the banana onto the coconut until covered. It will stick to the banana. Set aside.
Repeat with other banana and roll in the strawberries.
Using a sharp knife, cut the banana into approx 1cm slices and serve.

Flaxseed or linseed, Ground almonds, Grated apple, Weetabix, rice krispies
