Ingredient information
Eggs - I have used free range eggs with the lion stamp, as these eggs are perfect for weaning baby from 6 months old.
Grated mozzarella - My son loves grated mozzarella at the moment, you could use cheddar cheese instead if you would like.
Mixed herbs - One of my recommended staples in my store cupboard.
Spinach - I always worry my son is not getting enough greens, this is perfect for a quick recipe! You could use frozen spinach too!
Serving suggestion
This would be great served with some cucumber batons, quartered tomatoes, green vegetables, sweet potato wedges! Equally this is a great lunch idea that can be served on its own too! It is a great finger food for baby and a great lunch idea for Mummy too! If you wanted to add some toast fingers to the plate that would work too!
As a little dessert you could serve a 2 ingredient strawberry dessert or a mango pot.
Storage instructions
The great news is that the spinach and eggs can be frozen. All you will need to do to store them in the freezer is grab some airlock freezer bags, or you can stack them in between some parchment paper and store in airtight containers for up to 3 months. A great lunch or breakfast or snack idea that can be pulled from the freezer whenever you need.
You can store the spinach and eggs in the fridge for up to 3 days in the same way.
Equipment used to help with this recipe
Airtight container - I much prefer the click-shut lids on these containers compared to others. They are also dishwasher and freezer safe and BPA free, so very suitable for food use.
Pyrex Jug - I use this jug for so many recipes, holds hot heat really well, and is generally a great jug to use.
Saucepan - I really enjoy using this set of non-stick pans, they have been a good purchase.

Recipe | Spinach & Egg Fingers
Ingredients
Makes 6 fingers
2 eggs, beaten
1/2 teaspoon mixed herbs
70g fresh spinach, cooked
1 teaspoon unsalted butter
50g grated mozzarella
Instructions
Pre heat the oven to a medium-high heat of 180C or 350F degree.
Line a 4x6 inch dish with parchment paper.
Cook the spinach, on a medium heat with the butter (you could use olive oil or cooking spray) in a saucepan until wilted, approx for 5 minutes.
Once cooked, use scissors to chop the cooked spinach into smaller pieces.
Place the spinach into the prepared dish.
Mix the cheese with the beaten egg in a jug (you could add a splash of milk at this point if you wanted to). Combine eggs with the mixed herbs and pour the egg mixture over the spinach.
Pop into the oven on an oven rack for 25 minutes of cooking, leave to cool at room temperature and cut into 6 finger sized pieces.

If you wanted to double the egg recipe you could use a 9x9 inch dish to make slices or up to 12 fingers.
Other veggies you could add to this recipe could be peas, grated carrot, red peppers (bell pepper), red onion, garlic powder or grated turnip.
