Ingredient information
Oats - I have used gluten-free oats to make the recipe gluten free, but you can use regular oats too if you prefer. You could use almond flour instead as another gluten-free option.
Milk - I have used whole milk, but you can use an oat milk too to make the recipe dairy free.
Egg - I have used 1 free range egg for this recipe.
Baking powder - I have used a little baking powder for a little raising agent for the bars.
Fresh lemons - The fresh lemon juice brings such a lovely flavour to the bar and work really well with the raspberries.
Sweet raspberries - Fresh raspberries really makes the recipe so delicious and bring a yummy flavour to the bars. You can use a raspberry puree if you prefer without the lumpy texture. Packed with vitamin c they are a great option.
Serving suggestion
The gluten-free lemon bars would be great served with plain Greek yogurt for dipping, you can add a little lemon zest to the yogurt for a lemony dip, delicious. You could also choose to use sour cream too.
The bars can be served on their own and they are perfect for the lunchbox, or they can make the best dessert too.

Storage instructions
The bold raspberry lemon bars can be stored in the fridge for up to 5 days in the fridge in an airtight container.
They can also be frozen for up to 3 months in the freezer, they can be stored in an airtight container or wrapped in plastic wrap.
Make sure they have fully cooled down to room temperature before transferring to either the container or freezer bag.
To defrost the bars, leave in the fridge overnight until fully thawed. They will keep in the fridge in an airtight container for up to 3 days.
Once defrosted you will not be able to refreeze.
Equipment used to help with this recipe
9x9 inch baking tin - A square rust-resistant non-stick baking tin - very versatile and can be used for your cake bakes or roasting meat and veg!
Airtight container - I much prefer the click-shut lids on these containers compared to others. They are also dishwasher and freezer safe and BPA free, so very suitable for food use.
Large bowl - Definitely choose a stainless steel one - they are lighter than the stone or glass ones and very easy to clean.

Gluten-Free Lemon Raspberry Bars For Baby
Ingredients
Instructions
- Start by preheating the oven to 180C or 350F. Grease a 9x9 inch pan with the butter and with a piece of parchment paper, place parchment paper on the base of the tin and set aside. You can use melted butter if that is easier.
- Pour the oats into a food processor or Nutri bullet and blitz to an oat flour.
- Pour the oat flour, milk, egg, baking powder and lemon juice into a medium bowl and mix together using a spoon until fully combined. You could use a stand mixer, but it is not necessary.
- Drop the raspberries into the batter and carefully mix together.
- Pour the lemon mixture into the prepared baking pan. You could sprinkle the top of the lemon bars with a few extra oats if you like.
- Place in the oven and bake for 25-30 minutes until golden brown.
- Once cooked, transfer pan from the oven to the worktop and leave to cool in the tin. Once cooled, run a knife around the edges of pan to loosen.
- Using a wire rack, pop it on top of the tin and turn it over and tap the base of the tin and it should fall onto the wire rack. Remove pan, and peel off the parchment paper, flip over and leave to fully cool.
- Using a sharp knife and a cutting board cut into 10 slices.
Notes
If you wanted to use other fresh fruit next time, strawberries or blackberries instead of raspberries would work really nicely.
