Ingredient information
Puff pastry - I have used ready rolled puff pastry, buy you could make your own or roll puff pastry until it is 0.5cm thick.
Strawberries - You could use blueberries, raspberries or blackberries or a mix of strawberries and raspberries if you wanted to.
Cream cheese - I have used cream cheese, but you can used a plant based alternative if you prefer if you were going to make the recipe vegan.
Ricotta - If you did not have ricotta cheese you can double up on the cream cheese.
Double cream - Or known as heavy cream in the USA. You could use a whipping cream instead too, or a vegan alternative if you were to make the recipe vegan.
Lemon - A little lemon really elevates this recipe, you could also add in a little lemon rind too if you wanted a strong lemon taste.
Egg - I have used an egg as it does give the best golden brown bake, you can use cows milk too or a vegan plant based alternative too.
Serving suggestion
The puff pastry pinwheels are great finger foods for tiny hands served on their own, if you had any leftover strawberry cheesecake filling, you could serve that on the side with some extra strawberries if you wish.
Great for picky eaters, and a fun way to serve healthy snacks for bubs diet, and the whole family.

Storage instructions
The cream cheese pinwheels can be stored in the fridge for up to 3 days, stored in an airtight container.
If you wanted to freeze the sweet wheels, you will need to make sure that the pinwheels have cooled down before transferring to either a freezer bag or airtight container.
Ensure that the bag/airtight container is labelled with the item and the date. I use masking tape to label the airtight container.
To defrost the pinwheels, leave in the fridge overnight and make sure that they are fully defrosted, before re heating.
To reheat, place the Christmas tree’s in a oven proof dish and reheat 180C/350F for 4-5 minutes, they can be eaten at room temperature.
Equipment used to help with this recipe
Large bowl - Definitely choose a stainless steel one - they are lighter than the stone or glass ones and very easy to clean.
Silicone cups - I love reusable kitchen stuff! These silicone muffin cases are dishwasher and freezer safe and can be used in the oven up to 230 degrees C! Ideal for individual baby portions.
Muffin tray - A non-stick muffin pan that will easily clean any spills from the muffin cases. You will need one of these to easily hold the muffin cases.
Airtight container - I much prefer the click-shut lids on these containers compared to others. They are also dishwasher and freezer safe and BPA free, so very suitable for food use.
Recipe | Strawberry Cheesecake Pinwheels For Baby Led Weaning
Ingredients
Makes 6 Pinwheels
1 320g ready roll puff pastry
115g strawberries, mashed
1 tablespoon full fat cream cheese
1 tablespoon ricotta cheese
125ml double (heavy) cream
1/4 lemon juice
1 egg, beaten
Instructions
Start by pre heating your oven to a medium heat of 180C or 350F. Prepare a muffin tin with silicone muffin cases on a baking sheet.
Add the cream to a large bowl and start to whip the cream using a whisk or you can use an electric whisk, until the cream is thick.
Add the cheeses, mashed strawberries and lemon to the cream and stir.
Unravel the puff pastry straight from the fridge. Spread the cream cheese mixture over the puff pastry, until it is evenly spread.
Roll the pastry from one side to the other, until a long log shape is formed. Using a sharp knife, cut the log shape in half and then cut each half into 3.
Add one pinwheel to the silicone cups, egg wash the pastry with the beaten egg and place in your preheated oven for 25-30 minutes, cook for longer an extra 5 minutes or so if needed.
Great for the lunch box!

To make the recipe vegan you could use a vegan cream cheese, vegan cream and use a plant based milk to replace the beaten egg.
