    Ingredient information

    Creamy peanut butter - I use 100% peanut butter with no added sugar, salt or oil! This is great for the whole family!

    Weetabix - This is a great fortified cereal that is great for weaning! So versatile in many different recipes!

    Egg - I have used a free range egg, I find these are great for the whole family!

    These cookies are great for on the go or a quick snack from the kitchen! They are great on their own or they can be served as part of a dessert with Greek yogurt or even a little whipped cream! A delicious snack idea that could be added alongside some chopped berries or even great with some stewed apple!

    You could try serving with toast fingers or alongside a pitta lunch!

    Storage instructions

    The cookies can be stored in an airtight container for up to 5 days in the fridge or they can of course be frozen! All you will need to do is store them in an airtight container or freezer airtight freezer bags, they can be cooked, then frozen.

    To defrost, make sure you defrost the cookies in the fridge overnight and they can be fresh from the fridge for up to 3 days.

    Equipment used to help with this recipe

    Baking sheet - I have chosen to use a non-stick and BPA free baking sheet - they are easy to clean and, if you buy more than one, easily stackable and easily stored.

    Airtight container - I much prefer the click-shut lids on these containers compared to others. They are also dishwasher and freezer safe and BPA free, so very suitable for food use. 

    Recipe | 3 ingredient Peanut Butter Cookie

    Ingredients

    Makes 7 cookies

    • 100g smooth peanut butter

    • 2 weetabix (40g)

    • 1 large egg

    Instructions

    • Start by pre heating your oven to 180C or 350F, and line a baking tray with parchment paper.

    • Spoon the peanut butter into a large bowl, add in the egg, mix together until a smooth paste has formed.

    • Scrunch in the Weetabix using your hands.

    • Mix together the Weetabix, peanut butter and egg paste until you get a dough like consistency.

    • Spoon out approx a tablespoon of the mixture and roll into cookie balls using your hands.

    • Pop the small balls onto the lined baking sheet until you have all 7, press down slightly using the back of a fork, leaving fork marks on top of the cookies.

    • Pop into the oven, and bake cookies for 12-13 minutes, until golden brown. The baking time may vary so keep an eye on the cookies.

    • The baked cookies may foam at the sides towards the end of cooking, this is fine it is just the oil from the peanut butter.

    • Leave the chewy peanut butter cookies to cool at room temperature before eating.

    Recipe notes

    If you wanted to add in a touch more sweetness to the cookies, you could add in a handful of blueberries, mash them and mix them through the mixture.

    For added goodness too could add in a teaspoon of flaxseed and chia seeds.

    If you wanted to switch up the nut butters you could replace the peanut butter for cashew butter, almond butter or you could even use seed butters.
